I know how to run wire for a switch before a fixture, and, for a switch beyond a fixture. But, can you have a switch beyond muliple fixtures? I'm trying to picture the wiring for it in my head, and I'm not getting a clear picture.

If what you're asking is "can I run the power source to run of switched lights and then hit the switch last after the lights", then the answer is yes. However, you will need 14-3 between the light fixtures for this to work. This is because the intermediate lights need continual power that gets forwarded downstream to the switch (black), the switched power for the light (red), and a neutral (white).

As Suemarkp said, you need 14-3 or 12-3;
Here is a drawing I came up with:

For a group of fixtures all of which go on and off using the same switch:
Three wire cable must be used to go between those fixtures that are on the way from the hot feed to the switch. (Two wire cable goes to the switch itself.) Two wire cable can be used to connect to additional fixtures that are off to the side relative to the wiring path from hot feed to switch. Example: "can" lights in a ceiling.
In the diagram above, between the last light and the switch use the black wire for the "switched" and the white wire for the "hot". So that at the other end you don't have the white wire arriving to feed power to the light. (It is difficult if not impossible to get a 14-2 cable with red and black conductors.) When the white wire must be used not as a neutral as when going to a switch it should have a band of blue or black or red tape or paint near each end.
