I'm currently working with my son on rebuilding a circa. 1922 home that has 16" stone walls on the first floor.

The first problem (after removing the plaster and lathe) is matching the trim to the original door and window framing (installing 1/2" drywall) but the second problem, a major concern (with today's cost of energy), is how to insulate the outside walls.

With sixteen inches of stone, will a simple plastic vapor barrier be enough?

No it simply wouldn't be enough.

You will need to install faced (vapor barrier) insulation between the studs, but you must make sure that the insulation doesn't make contact with the stone exterior wall.

Sometimes with trim wood and stone houses you will have to be prepared to make your own trim. You will probably have to mill down wider wood to make the sizes you require.

...to go with "F/F/F"? (At this time I think it is Film/Foam/Film)

What is the significance of the fiberglass touchin the stone?

What is the significance of the fiberglass touching the stone?

The stone will absorb moisture and the fiberglass touching the stone will then absorb the moisture from the stone, the real problem is that the stone will dry out but the fiberglass will hold the moisture and start a nice breeding ground for mold. Also you have the problem of moisture transfered from stone to fiberglass to drywall and that you definitely don't want.
