I am re-wiring my kitchen to have two 20A circuits, one per countertop. I'm using 12/2 wire. Do I also need to use 20A receptacles as well? All the home wiring books I've looked in, and even pictures of kitchens, always show 15A outlets - ones without the distinct 20A "leg". So what is correct?

Either is correct.
Many electricians install 20 amp devices on 20 amp circuits and they are wasting their (or your) money.
Code says you can only use 15 amp devices on a 15 amp circuit, but either 15 or 20 amp on a 20 amp circuit. This is if there are more than one 15 amp receptacle installed. A duplex receptacle is considered two recpetacles.
There is absolutely no reason to use 20 amp devices in a residence unless there is a specific need for one, such as a larger air conditioner.
When was the last time you had to plug in anything with a 20 amp configuration cord plug.
