I want to put in a electric range with double ovens what wire do i use 8-3 or 6-3? thanks

If all in one free standing range you must install a red black white bare or green conductor to serve as the range branch circuit. YOu may install 8 awg copper or 6 awg aluminum as a minimum size. Advise 6 awg copper or 4 awg aluminum as better option but not required. 50 or 60 amp breaker max on 6 copper or 4 aluminum and 40 amp breaker max on 8 awg copper or 6 awg aluminum.
You must have a four wire cable with a four prong plug and four wire range cord.
If these ovens are separate from the range let us know rules would be different.

I am switching from a gas oven/range to an electric double oven/range. It is all one. I have been told that I have to use 6/3 wire but have also been told that I can use 8/3 wire.

As long as it is black, red, white, bare or green with a four prong range receptacly either 8 awg on 40 amp or 6 awg on 50 or 60 amp breaker is fine per 210.19 and 220.19 of the NEC.
