I will be running a dedicated curcuit from a breaker panel to an outlet for a convection oven.

It will be a 208V, 30 Amp, single phase curcuit. What are my options for running this curcuit if my breaker panel is a 110V panel at each single pole breaker?

I know that the wire needs to be 10 gauge for this application, but am not sure as to the correct process from panel to outlet with the above specs.

Check between two hot legs in the panel, it sound like you may have a 240v system. And you need to check if the stove much cares if it is 240v, or 208volts.

What type of building is this?

Be careful. Look to see how many hot wire you have on this oven. If you have three hot wires then you have a three phase oven and it will not work on 240 volt single phase.

I suspect you have a three phase oven having three hot wires this is not compatible to a 240 volt single phase service with only two hot wires.

Do you have a 208 four wire three phase or single phase panel? How many hot feeders serves that panel? A wye three phase panel will have three hot wires yet will read 110 volts to ground from each breaker yet will read 208 volt between any two hot legs.
