How do you know which wire is the black and which is the white when wiring and both wires coming from the box are the same black color. Is there a way to test which is which?

You can take a voltage tester and touch a known ground no matter how good a ground as long as it is large metal and touch each individual wire. One wire will cause the voltage tester to react strongly and the other won't move or may move very little. The strongly moved reading will be your hot wire.

A second and better way is to run a temporary wire from a known electrical ground to the area of your voltage test. One will read 120 volt yet the other will not read 120 volts then you know the black is the one that read 120 volts to that test wire.
