I'm having a new home built. The builder has in the plans the light switch in a walk in closet behind the door. I didn't notice it until it was already built. Isn't there a code againt having the switch in a readily accessible location?

No, there is no rule requiring the switch for a walk-in closet light to be in an intelligent location. This is left up to the wisdom of the contractor.
The NEC does require the switch to an attic or crawl space light to be near the door.

On the other hand, if the drywall is not up yet, it's not a real big change-order to have the electrician put the switch in a more typical location. Should be able to be done in a regular service call.
