what type of wires must i use to replace an element wire that keeps on breaking. wire is old and brittle.

I worked for a great while in an industrial establishment which used large ovens and heated conveyor lines (bread factory). The wire that is used in ovens is type TGGN, and is normally only available at electrical supply houses. It has a nickel-plated copper conductor with braided fiberglass insulation, and available in a great range of American Wire Gauge sizes. It is rated for 250° celcius (482° F).
The terminals that you crimp on high temperature wire are just as important as the wire itself. You need "high temperature terminals", which are nickel plated steel, beryllium copper, or phosphorous bronze (as opposed to the regular tin/lead plated brass terminals that are more commonly available). It is important to use a good quality crimper to crimp on high temperature terminals. These terminals are heavier, and need a good strong stake for a good crimp. If the termial isn't crimped firmly, it will heat up from the loose connection and burn off anyhow, despite using the correct materials.
If you don't replace oven wiring with the correct materials, you'll revisit this problem in a short period of time.

Hi,
I use an fiberglass coated, 14 gauge, stranded wire for oven wires/repairs.
There is also an 12 gauge if needed but the 14 is fine as most ranges today use #18 wire between the controls and elements.
High heat terminals are a bit more expensive but do work very well!!
