We are removing some water supply lines we won't be using. Where is the best place to cap the lines? I will also need to cap the drain line. Thanks in advance!

Where? Give me some options... In the wall? out in the open? In the basement?

If you never want to see them again (or need them again) then cut a hole in the drywall big enough for you to cut and solder on caps if it's copper or glue if it's cpvc.
WARNING: If soldering in the wall cavity....be careful, make sure there is nothing flammable around the area your working. If your really worried get yourself a heat shield to put behind the pipe your working on.

I should have been more specific. I'm fortunate enough that the piping is in the drop ceiling. I can get it pretty close to the main supply trunk for both hot and cold water.

Then if you capping in a drop ceiling space, cap it where ever you want. If it were me I'd cap it close to the supply line where it branches off.
