How safe is it to use WaterPex quick connect fittings for replacing a leaking copper cold water pipe area in crawlspace? I am thinking about connecting a piece of Pex pipe inline of original copper pipe to fix the damaged area. Here is the reference site.

No problem, it's a good choice.

If you are inserting plastic into an all metal water system, make sure you add a jumper across the plastic portion to maintain electrical continuity in the piping system. That is, assuming your metal pipes are properly bonded to the electrical grounding system already.
